Saliva Chicken
Ingredients
- 2 chicken thighs
- 10 cm section shallot
- 1 inch ginger sliced
- 1 tablespoon cooking wine
- 1 teaspoon Sichuan peppercorn
- 1L cold water
- 1 tablespoon chopped spring onion
- 1 tablespoon chili oil
- 2 teaspoon sesame oil
- ½ tablespoon soy sauce
- 1 tablespoon vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 teaspoon grated ginger
- 1 teaspoon Sichuan peppercorn oil (optional)
- 2 teaspoon roasted sesame seeds

Instructions
- Cut the meat off the chicken things. Pay attention to keep the integrity of the meat.
- Prepare a large pot and put the chicken meat in. Add water to soak over chicken and sliced ginger and shallot white in to cook for 5 minutes with high fire and then leave the pot covered for around 10 minutes.
- Prepare a large bowl and add cold water in. Move the chicken from the pot and soak in the cold water to cool down. Cut the chicken into small sections and lay on a serving plate.
- Prepare a small bowl and mix all the ingredients for sauce together. Pour the sauce on top of the serving plate and sprinkle some chopped spring onions.
- Then decorate the plate with carrots.
Notes
If you get roasted peanuts, sprinkle some on top.
